Ingredients (for 4 person):

1 1/4 poud entrecote steak- four 3/4 pound slices, 1 knob of butter, 1 glass of white wine, 2 bunches of rocket, flakes of Parmesan cheese, 1 glass of Modena Balsamic Vinegar PGI, 4 tablespoons of liquid cream, salt, oil

Preparation:

Brown the steaks in a frying pan and then pour over the white wine. Lower the heat and finish cooking them according to how you like them. When they are cooked, add the Balsamic Vinegar of Modena PGI and the cream, then boil for about a minute. Cut the steaks into thin slices so as to form a fan shape on the plate. Cover them with the rocket and the Parmesan flakes. Dress with the Modena Balsamic Vinegar PGI sauce. Serve immediately while still hot.
