Warm ricotta cheese tart with Balsamic Vinegar of Modena PGI

Ingredients (for 4 person):

1/4 pound sugar, 3/4 pound fresh ricotta cheese, 1 pinch cinnamon, 1/4 pound dried biscuits, 3 ounce melted butter, cooled 3 eggs, 1/4 pound custard For the garnish: Strawberries Icing sugar Balsamic Vinegar of Modena PGI

Preparation:

Whip the eggs with the sugar, add the ricotta (minus liquid), the cinnamon and the custard. Crumble the biscuits and mix with the butter. Turn the biscuits into two 18 cm (or one large 24 cm) baking tins, crushing and tamping them down a little to even the surface, then cover with the ricotta mixture. Bake at 180 for 45 minutes. Remove from the oven and place on a serving dish. Serve lukewarm, garnished with icing sugar, strawberries and a thread of Balsamic Vinegar of Modena PGI.
