Ingredients (for 4 person):

FOR 4 PEOPLE
12 slices of salt-cured meat, not too thin, 100 gr pearl barley, 10 cherry tomatoes, 2 spring onions, 3 spoonfuls balsamic vinegar of Modena, Extra-virgin olive oil, 4 basil leaves, Salt and pepper, Chives for tying

Preparation:

Boil the barley in plenty of salted water, add a spoonful of oil, then let cool. Separately, chop the spring onions and slice the cherry tomatoes and basil. Stir these together and add balsamic vinegar of Modena, salt, and pepper. Dress the barley with the balsamic mixture. Shape small balls the size of a walnut and place one on each slice of salt-cured meat. Close each slice like a sachet and tie closed with a chive strand. Serve with a thread of oil and balsamic vinegar of Modena to taste.
