Ingredients (for 4 person):

FOR 4 PEOPLE
250 gr pearl barley, 150 gr cherry tomatoes, 1 sprig of rocket, 150 gr smoked salmon, 4 spoonfuls of balsamic vinegar of Modena, 1 stalk of celery, 1 spoonful capers, Extra-virgin olive oil, salt and pepper

Preparation:

Boil the barley in plenty of salted water, drain, add two spoonfuls of oil, and let cool. In the meantime, cut the salmon into strips, slice the tomatoes and celery, and chop the rocket. Place in a bowl and add the capers, balsamic vinegar of Modena, and a spoonful of oil. Toss the barley with the mixture, adjust the seasoning with salt and pepper to taste, and serve at room temperature with a thread of oil and balsamic vinegar of Modena.
